Ingredients:
- Catfish fillets
- Milk
- Cornmeal
- Salt, pepper, or other seasoning to taste
- Oil for frying
Directions:
- Season cornmeal with salt, pepper or other seasonings.
- Dip catfish in milk, then in cornmeal. Shake off excess cornmeal.
- In a large skillet, fill pan with ½ inch of vegetable oil and heat to 350 degrees.
- Once oil is hot, begin frying fish in batches until they are golden brown. Flip fish so each side is cooked evenly.
- Drain fish on paper towels.

Ingredients:
- 1 cup self-rising corn meal
- 1 cup self-rising flour
- 2 teaspoons Lawry’s Seasoning Oil for frying
- 1 egg
- Milk
- 1 medium onion, chopped fine (about ¾ cup)
- ½ cup sharp cheddar cheese, chopped into ¼ in. cubes
- 2-3 tablespoons Italian breadcrumbs (enough to cover the mixture)
Directions:
- Mix flour corn meal and Lawry’s Seasoning. Add milk until smooth. Add egg and blend in. Add Italian breadcrumbs, onion and cheese. Stir until smooth. Mixture should be thick but not soupy.
- Heat oil to 300 degrees. Spoon batter into oil (use two tablespoons: one to dip mixture the other to rake it into oil).
- Cook until golden brown (if oil is too hot the batter will cook on the outside but will still be raw in the middle).
